The Whole Roasted Cauliflower
The combination of flavors is perfect! It has a bed of hummus, cauliflower on top and is then topped with a spectacular tahini sauce! Finally, it has crushed pistachios on top to finish with a perfect crunch.
I promise you are going to go crazy with this recipe !! The cauliflower is delicious crispy on the outside but with all its flavor and soft inside !! The combination of flavors is insane!
The best thing is that you will probably have all the ingredients at home! And if you’re out of hummus you can just omit this step, although it gives the dish a really good creamy feel.
The Recipe
The Whole Roasted Cauliflower
Cook time: 40-50 min
Prep time: 15 min
Yield: 1 whole cauliflower
Ingredients
- 1 whole head of cauliflower (I bought yellow cauliflower because I saw it in the supermarket and couldn't resist! Look at that color!)
- 2-3 Tbsp avocado or olive oil
- Salt + pepper
- For the sauce
- 3 Tbsp tahini
- 2 Tbsp Greek yogurt
- 1 Tbsp maple syrup
- pinch of salt
- * Water or almond milk to adjust consistency in case it is too thick
Instructions
- Preheat oven to 200 ºC
- Place wax paper on top of a tray and place cauliflower.
- Bathe it with the salt and pepper oil and give it a good smear with your hands. Put it in the oven for at least 45 minutes! It has to be crispy on the outside but soft of the inside.
- Make the sauce, mixing all the ingredients together.
- After the cauliflower is done, add hummus to an extended plate and spread it around. On top, place the cauliflower, bathe it with the sauce and finally add the chopped pistachios !!
