The Brownie Cookie filled with Peanut Butter
I wanted to make a mega chocolate dessert and I got the idea of making some chocolate cookies, and then .... I saw a tub of peanut butter and I couldn't resist!! So and I filled them, the combination is perfect!
The recipe is pretty simple and calls for very few ingredients. We’ll be using oat flour for this recipe but feel free to swap in whole wheat flour if you’re not gluten intolerant, all-purpose works as well.
If you want you can also swap the ghee for coconut oil but i really recommend the ghee since it gives the cookie a buttery feel, and honestly what is better that butter taste?
Monk fruit can also be used instead of coconut sugar, just depends what you have at hand and if your’e watching the calories, monk fruit is always a great sweetener, for me i just love the caramel taste that you achieve with coconut sugar.

The Recipe
The Brownie Cookie

Yield: 6 mediun cookies
Ingredients
- 3/4 cup coconut sugar
- 1/4 cup melted ghee
- 1 cup oat flour
- 1/4 cup cocoa
- 2 Tbsp. almond milk
- 1 Tbsp. almond butter
- 1 tsp. baking powder
- pinch of salt
- 1/4 cup chocolate chunks
- peanut buter
Instructions
- Preheat oven to 350 ºF
- In a bowl, mix coconut sugar, oatmeal, cocoa, baking powder and salt
- Add ghee, almond butter and almond milk and blend until you have a dough. Use your hands!
- Add chocolate chips.
- Prepare a tray with waxed paper, with your hand form balls and flatten them into a cookie shape, which is flat but not so thin. Add peanut butter on top and make a flattened ball again and cover.
- Repeat this step, until you have your 6 cookies. Bake at 180C for 8-10 minutes! NOTE: I made 3 filled with peanut butter and 3 left them simple without filling ... for all kinds of moods!
